I made this recipe up after my friend, Gabby said “All you need is 1 cup of peanut butter, 1 cup of sugar and an egg!”
Yea.. Not so much.
The first time I tried this and was not satisfied with the results. Attempt 2, I put my baking knowledge to the test and literally made this up..
1 Cup - Santa Cruz Organic Creamy Light Roasted Peanut Butter
1/2 Cup - Organic Unsalted Butter (I use this)
1/2 Cup - Organic Light Brown Sugar
1/2 Cup - Organic Cane Sugar
1 Egg - Organic
1 TSP - Baking Soda
2 TBS - Corn Starch
1/2 Cup - Organic Semi-Sweet Chocolate Chips
Notes:
For optimal mixing results use a Kitchen Aid Stand Mixer & the Tilt-Head Flex Edge Beater attachment.
Bake @ 375 Degrees F for 12 mins
Use a fork on the last minute to lightly pat the tops of the cookies down
After removing from the oven, add 3 chocolate chips to the top of each cookie and press them down into the warm dough
